A distinctive feature of these cheeses is the presence of specks of green-blue mold in a soft cheese mass, which gives the cheese a special taste incomparable with anything.

According to legend, blue cheeses owe their birth to a young shepherd who, when he met a random stranger, was so carried away by her that he forgot about dinner. The cheese left by him in a lime cave was overgrown with mold. This sad circumstance did not prevent the lover from subsequently eating spoiled cheese and finding its taste pleasant.

Cheese ripens for three months in a wet cellar. thanks to which noble mold is formed inside the cheese. As it ripens, it acquires an increasingly spicy and piquant taste. The cheese mass REGINA BLUE is moist, sticky and slightly friable.

Basically, cheese is considered a dessert, so it is served with berries, nuts, jam, jam. But in some European countries they add it to soups, sauces and pizza. You can only say, try it! And then you will find your own combination. The only thing is that before you put it on the table, you need to warm it to room temperature.
